Ingredients

- 3 (8 oz) blocks of full-fat cream cheese, softened
- 3 large eggs
- ½ cup sour cream
- ½ cup heavy cream
- 2 tbsp butter (melted)
- Optional: 1 tsp vanilla extract (if allowed in your plan)
Instructions
- Preheat your oven to 325°F (163°C).
- In a large mixing bowl, beat the softened cream cheese until smooth.
- Add eggs one at a time, mixing just until combined.
- Add sour cream, heavy cream, melted butter, and vanilla (if using). Mix gently.
- Pour the mixture into a greased 8-inch springform pan.
- Place pan in a water bath and bake for 50–60 minutes, or until the center is just set.
- Turn off oven, crack the door, and let the cheesecake cool for 1 hour.
- Refrigerate at least 4 hours (overnight is best) before slicing.
Notes
- Don’t overmix or overbake that’s how you get rubbery cheesecake.
- Always let it cool slowly to prevent cracking.
